Valentine’s Day is right around the corner, and what better way to show someone that they’re your sweetheart than by whipping up a sweet and delicious dessert? Here is a new twist to an old favorite. (Feel free to use coconut cream with no sugar for a dairy/sugar-free option.)
You can also put these ingredients in a blender with rum for a strawberry lime daiquiri.
What you’ll need:
- Two lbs. strawberries (leaves removed and thinly sliced)
- ¼ cup + 3 tbsp. honey
- 2 tbsp. freshly squeezed lime juice
- ½ teaspoon lime zest
- 1 cup heavy cream, coconut cream for the non-dairy option
- 2 pints lemon sorbet
Put the strawberries on the side in a bowl that is beat proof. Grab a small saucepan, combine most of the honey (all but 1 tablespoon) and lime juice and bring to a boil.
Pour this mixture over the strawberries and stir it all up to coat each slice of berry.
If you let this stand for 25 or 30 minutes, the berries will soften and the mixture will cool to the perfect temperature.
In another bowl, take the cream and the rest of the honey and whip until you get those soft peaks forming.
Now it’s time to put it all together. In a bowl, the sorbet goes on the bottom, then the strawberry mixture, and then a puff of cream on top. Garnish with lime zest, voila!
